Three ways to make Taiwanese shochu taste better
Tip one: choose the right glass
The glass is the first step in tasting shochu, and the right glass shows its flavor at its best. Taiwanese shochu is usually tasted from a small glass, which helps concentrate the aroma and taste.
Tip two: the right sip and the right temperature
When tasting Taiwanese shochu, the size of each sip and the temperature both matter. Too large a sip can hide the flavor of the shochu, while too small a sip makes it hard to appreciate its richness. Serving it too warm or too cold also affects the flavor.
Tip three: the food to eat with it
Taiwanese shochu has a rich rice aroma and a full taste, with moderate acidity, so it suits strongly flavored dishes, and the acidity in the spirit also offsets the greasiness of heavy dishes. Grilled beef tongue, grilled Pacific saury and even yakitori all go well with it.
