ManCheng Distillery is in Fenglin, Hualien, in the East Rift Valley with the Central Mountain Range behind it, and distills spirits with a local flavor. We make RAISE Taiwanese Whisky and Taiwan Shochu from Hualien rice, wheat and koji. Each spirit has its own character, from the aroma of the grain to the flavor of oak-cask maturation.
Hualien rice, wheat and koji are the ingredients of ManCheng's spirits. Saccharification and fermentation gradually turn the grain into a fermented liquid, the starting point for distillation and for the flavor of each spirit.
Distillation and oak-cask maturation
Taiwan Shochu is distilled at low pressure and low temperature to keep the fine aroma of the grain. Taiwan Fang Chun is Taiwan Shochu distilled a second time in a copper pot still, and has light floral and fruit notes. RAISE Taiwanese Whisky is matured in bourbon casks, PX sherry casks or Oloroso sherry casks, and each cask type gives it a different flavor.
